Southwestern Pasta Salad Recipe

Ingredients:

  • Rotini Pasta
  • Cilantro
  • Corn
  • Grape Tomatoes
  • Ranch Seasoning
  • Taco Seasoning
  • Black Beans
  • Red Pepper
  • Green Onions
  • Greek Yogurt
  • Mayonnaise

Instructions - How To Make Southwestern Pasta Salad:

  1. Cook the Rotini Pasta: Follow the instructions on the box to cook the Rotini Pasta. Once cooked, strain and rinse with cold water. Place the pasta in a large bowl and let it cool in the refrigerator. For best results, cook the pasta the day before and refrigerate overnight to ensure it's nice and cool when mixing with the other ingredients.

  2. Prepare the Dressing: In a medium bowl, combine Greek yogurt, mayonnaise, ranch seasoning, and taco seasoning. Mix well to create a flavorful dressing for your pasta salad. Set the bowl aside in the refrigerator to chill.

  3. Chop the Vegetables: Dice the grape tomatoes, red peppers, and green onions. Chop the cilantro finely.

  4. Prepare the Corn and Beans: If using canned corn and black beans, strain and rinse them before mixing.

  5. Combine Ingredients: Retrieve the bowl of Rotini Pasta and the dressing from the refrigerator. Add the chopped veggies, corn, black beans, and cilantro to the pasta. Pour the dressing over the mixture and toss thoroughly to ensure all ingredients are well coated.
