Scientists found that eating broccoli and other cruciferous vegetables (cruciferous meaning edible vegetables in the cabbage family including cauliflower, cabbage, kale, bok choy, broccoli, brussels sprouts, etc.) might prevent obesity by activating AMPK (adenosine monophosphate-activated protein kinase). AMPK is an enzyme that acts as an energy sensor and helps regulate glucose levels and fat burning.
