1. Classic Chicken Noodle Soup

This timeless soup is not only comforting but also great for fighting off winter sniffles.

Ingredients:

    • 2 tbsp olive oil
    • 1 onion, diced
    • 3 garlic cloves, minced
    • 3 carrots, sliced
    • 2 celery stalks, sliced
    • 2 chicken breasts
    • 8 cups chicken broth
    • 2 cups egg noodles
    • Salt, pepper, and fresh parsley to taste

Instructions:

    1. Heat the olive oil in a large pot. Add onion and garlic, sautéing until fragrant.
    2. Add carrots and celery. Cook for about 5 minutes.
    3. Pour in the broth and add the chicken breasts. Simmer for 20-25 minutes or until the chicken is cooked through.
    4. Remove the chicken, shred it, and return it to the pot.
    5. Add the egg noodles and cook for another 8-10 minutes.
    6. Season with salt, pepper, and parsley. Serve hot and enjoy!

 

2. Creamy Tomato Basil Soup

Ingredients:

    • 6 large tomatoes, halved
    • 1 onion, chopped
    • 4 garlic cloves
    • 2 cups vegetable broth
    • 1 cup heavy cream
    • 1/4 cup fresh basil leaves, chopped
    • Olive oil, salt, and pepper

Instructions:

    1. Preheat the oven to 400°F (200°C). Place the tomatoes and garlic on a baking sheet, drizzle with olive oil, and roast for 25 minutes.
    2. In a large pot, sauté the onion in olive oil until soft.
    3. Add the roasted tomatoes and garlic to the pot, followed by the broth. Bring to a simmer.
    4. Use an immersion blender to blend the soup until smooth.
    5. Stir in the cream and basil, season with salt and pepper, and serve warm.

3. Hearty Lentil and Vegetable Soup

This nutritious soup is filling and packed with fiber and plant-based protein.

Ingredients:

    • 2 tbsp olive oil
    • 1 onion, chopped

    • 2 carrots, chopped
    • 2 potatoes, diced

Instructions:

4. Loaded Baked Potato Soup

Ingredients:

    • 4 large potatoes, peeled and diced
    • 4 slices bacon, chopped
    • 1 onion, diced

    • 4 cups chicken broth

    • 1 cup shredded cheddar cheese
    • 2 green onions, sliced

Instructions:

    1. In a large pot, cook the bacon until crispy. Remove and set aside.

    • 4 cups vegetable broth
    • 1 tsp cumin
    • Avocado and lime for garnish

Instructions:

    1. Heat olive oil in a pot. Sauté onion, garlic, and jalapeño for 5 minutes.
    2. Add black beans, tomatoes, broth, and cumin. Simmer for 20 minutes.
    3. Use a blender to partially blend the soup, leaving some chunks for texture.
    4. Serve with avocado slices and a squeeze of lime.
